What's for Dinner, Thurs., June 8, 2023

I'm finishing up my turkey noodle soup and cornbread because I've been so busy I've had no time to cook. And am I ever grateful I have such a delicious meal in the frig as a leftover because as we all know, soups get better with time. Plus I'm hungry as can be and am happy not to resort to processed food from the supermarket.

For dessert, Greek yogurt and strawberries. The berries have a little swirl of agave over them.
Tea from the selection I recently received; I think it's from "Japon," as the mfr's put it.

I hope to do some meal prep tonight for the weekend. I bought fabulous veggies from the farmer's market and am excited about cooking them. Napa cabbage, red cabbage, multi-colored peppers (the small, sweet kind) green pepper, and beautiful asparagus.

Then I have greens from my garden, like broccoli microgreens, radish greens, and Swiss chard. Plus lettuce for salads, both romaine and Simpson.

We just returned from a camping trip and I have thawed hamburger in the cooler to do something with, so burgers it most likely will be.

I thought it was fitting to add a little liquid smoke today

Ice creame sundae with mini chocolate chips, peanut butter, and topping.

4. Pork roast

They call it a butt roast, but it is a shoulder. It is rather large for our household at more than 11 pounds, so it just finished a slow bake after about 10 hours at 250.

Some may be pulled and sauced for consumption on a bun or perhaps eaten plain. Leftover large pieces will be frozen for future meals. Not sure what, but stir fries with twice cooked pork comes to mind.

We will also have corn on the cob and a mixed salad.

5. Chicken Parmesan

Last evening, the First Mate breaded and fried a bunch of boneless chicken breasts. We had a delicious dinner with fried onions/peppers/spinach and yellow rice.

Tonight, she’s using the remaining chicken to make chicken Parm with spaghetti and a Caesar salad.

Tomorrow, we’re going to a marina where we’ll be able to buy fresh seafood on the docks. Yum!

We’re anchored halfway between Charleston and Georgetown, SC. Lots of Trump flags and signs. Ugh.

Dark chocolate and red wine for dessert

over brown rice


homemade date bars for dessert


Dad had pan-fried London broil, baked potato, sauteed zucchini and sliced tomatoes

an orange 🍊 before bedtime. Been watering the garden every evening. If we don't have any rain soon it's going to be a long dry summer.

with soy, Worcestershire sauce
garlic, onions s/p
on low of 7 hours
shredded it and made a brown gravy
with mushrooms stirred everything
together and had it over noodles and
had green beans


how did the Spaghetti squash turn out ???
acorn squash is good too ... butter and brown sugar... summer squash (yellow squash)
I love sliced and rolled in egg and bread crumbs
and fried ....

dry-sauteed string beans, and Ma Pa Tofu, which I've gotten OK at during the lockdown. I'm trying a new recipe for onion pancakes, which is proving to be a lot of trouble for just two people.
