Plum cake

Plums are in season now and I thought you might enjoy this simple plum cake. The recipe was originally published in the Chicago Tribune some 30 years ago.

Upside Down Plum Cake

Preheat the oven to 350 degrees. Grease a 9" pie pan.

4-5 ripe plums, pitted and sliced (you can also use prune plums but you need more and they only need to be halved)
6 tbsp. sugar
1/4 tsp. cinnamon, 1/4 tsp. allspice, several gratings nutmeg
Mix the above and let sit while preparing the cake.

1 cup (sifted) flour (I don't bother with the sifting, just stir before measuring so it's not too packed)
2 tbsp. sugar
1 and 1/2 tsp. baking powder
1/4 tsp. salt
4 tbsp. butter
1/3 milk
Mix the dry ingredients; cut in butter to the texture of coarse crumbs.
Arrange the plum slices in a pretty pattern on the pie pan. Save the juices left in the bowl.
Add the milk to the cake batter; roll or pat the dough over the plums.
Bake 30 minutes. When it's cooled a little, put a plate over the pie pan and flip it, and take off the pie pan.
Pour over the juices left from the plums - you might want to heat it a little to dissolve the sugar.
Good warm or cold.

never had plum cake but this sure sounds good. Think I'll try it after I go to the store this week
