Almond-Nectarine Galette

I've never baked with nectarines before, and they are really nice right now, and it got just cool and dry enough to risk using the oven.

So I (cheated and) bought a ready-rolled pie crust from the refrigerator case at the market, some nectarines, and some slivered almonds. No recipe, just laid the crust on the baking sheet, sliced the nectarines up (used 4 - 3 would have sufficed), mixed in 1/4 c sugar, 1 tbsp flour, and 1/4 tsp cinnamon plus the almonds and heaped them in the middle of the crust. Then I folded the edge up and over and baked @ 400F for 50 minutes. Oh, before baking I brushed the folded over part of the crust with melted butter and sprinkled some sugar on that.

Easy peasy, no recipe to remember where you put it. Any fruit would do, but apples are next on my list. Pecans and dried cranberries instead of almonds.

Thanks for the idea. I've got 6 big nectarines just about ripe enough to make into something. pinto Sep 2012 #1
