(12,253 posts)I think I'll do them smothered and serve them with mashed potatoes and salad. I'll probably stir up another veggie as well. It we stay cooled off from the cold front, I might even bake a batch of biscuits.

Homemade veggie broth, Veggie Patch "meatballs," kale, and vegetarian cheese tortellini. My husband is going to be stoked when he gets home from work.

(50,130 posts)80 degrees and lots of water skiers on the river. A seaplane landed this a.m.; scared the hell out of the kittehs.
Rummage sale this morning, Ducks football in about half an hour on the telly! And my favorite jazz program on the radio. A great day.
For supper, curried chicken with rice, a spinach salad.
At the rummage sale, I picked up a lebanese cookbook from the 1970s, and am drooling. One interesting thing -- they call for cinnamon in the tabbouli. I've never seen that before!

It was quite good and I have enough left for at least two other dinners.

3/4 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons vegetable oil
1/2 cup onions
1 garlic clove, finely chopped
1 Turkish or 1/2 California bay leaf
1 cup heavy cream
1/2 cup reduced-sodium chicken broth
1 1/2 tablespoons finely chopped fresh tarragon
Pat chicken dry and sprinkle all over with salt and pepper.
Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then sauté chicken, skin side down first, turning over once, until browned, 10 to 12 minutes total per batch. Transfer to a plate.
Pour off all but 2 tablespoons oil from skillet, then cook onions, garlic, and bay leaf over moderate heat, stirring occasionally, until onions are softened, about 2 minutes. Bring to a boil. Stir in cream, broth, and 1 tablespoon tarragon, then add chicken, skin side up, and simmer, covered, until just cooked through, 20 to 25 minutes. Transfer chicken with tongs to a platter and keep warm, loosely covered. If necessary, boil sauce until thickened slightly.

(24,146 posts)my sister's bff of all bffs is in town, so dad took us out for a nice dinner. started with tuna poke, then a mixed greens salad with pumpkin seeds, beets, a fried goat cheese crouton and balsamic vinaigrette. entree was red deer loin with a blackberry demi glace and potato croquette. washed it down with two dirty vodka martinis and i didn't have room for dessert, although i really wanted a piece of the salted caramel vanilla crunch cake. i'm now regretting i didn't get a piece to go.

(9,791 posts)I'm hoping the weather cooperates long enough for us to have a campfire in the outback back yard tomorrow. I took some Hebrew National hot dogs out of the freezer since the forecast is looking good. Temperatures are really cooling off for the upcoming week here in the mountains so soup will be on the menu. I'm really hungry for pasta fagioli and New England clam chowder.
