Hopefully they sell it fresh. Can you do lettuce in the shade? I do chard because my lettuce always bolts from heat and direct sun. I have learned to love it --especially that it grows all season long--but it wasn't originally my first choice.

but I really love Swiss Chard. My f-i-l always had a big garden and the Swiss Chard was the first thing he planted and we enjoyed it into the fall.

We will try again next Spring....my husband cut a few trees down, which should help with the too much shade issue. We've been composting since we moved here five years ago and have some really nice compost to use, too.

I think I'll do that tomorrow. I have some big ham bones in the freezer and a bunch of collards in the fridge, so I'll do up some white beans in that yummy broth. Thanks for the inspiration!

One of my grandmothers served brown (pinto) beans with every meal and our family was very poor for many generations. The crazy thing is, the one thing we were 'not poor enough' to do, according to grandma, was eat greens. That's what desperate people did, only starving people ate greens, 'folks who don't know no better' (racist code) and even though we were regularly desperate for money we didn't eat greens because that would have meant admitting we were on the bottom. I've been grown up now for a longlonglonglong time and eat greens with pleasure. Can't help but wonder if grandma had slipped some greens into her beans that her children would have lived much healthier lives. Her cooking theory and legacy have killed five cousins younger than I (obesity, diabetes, heart attack, arthritis, cancer). Fried meat, fried 'taters, biscuits and white gravy every day, sometimes more than once a day, set a pattern for them that their bodies could not overcome.

Greens in beans is a heavenly dish and I thank you for the inspiration. To your continued good health!

My favorite childhood meal was black eyed peas, cold water cornbread and fried potatoes. No greens back then at my family table, either.

Add a good dish of greens to go with and that makes it a perfect meal.

lots of leftovers, but I did make a batch of date syrup so will be doing the roasted cauliflower with date syrup and tahini drizzle to go with it. Looks like everyone is on a legume kick today. That's what I'll be cooking tomorrow.

re-write suggestions / additions. Pretty typical grant process, but last minute input really pushes it. There still remained the leg work - take the finished product down to our fiscal agent, get signatures for the legal stuff, run off five copies, collate and deliver all neatly packaged to the granting agency. (pinto whining here)

Anyway, it got done. Yeah! Once back home I went for the mac 'n cheese. Simple and there's time for some DU browsing and a movie.

Tomorrow I'm going to step up the curried ground pork, green bean menu.

I think I will stuff it with goat cheese and olives. Still have some lettuce and carrots, so will make a side salad.

I need to go to the grocery store!

The most incredible, sublime vegetable soup was awaiting me when I arrived home from class.

And there is a story behind that, which I will tell another day when it is not 1:45 a.m.

I picked up a loaf of fresh Italian bread at the market this afternoon to eat with it. DH and I killed half of the loaf. It was cool today and I was hungry for some beans and pasta.
