For dessert, it's Carrot cake.

(35,619 posts)The tomatoes are beautiful (making from fresh, which I am roasting). I may be back to post pictures later.
The macaroni and cheese is made with whole wheat macaroni and uses ricotta and cottage cheese to cut down on the fat.
And a big green salad, of course.
I have to go out for rustic bread.

(118,224 posts)I've got a gallon or so of beefstock from a pot roast I did, and mebbe two gallons of turkey stock from rendering the Christmas carcass, plus various other leftovers
I've mixed a fraction of the turkey stock with an equal amount of the pot roast stock, and plan to add some leftover grain (rice, barley, and quinoa) I had cooked in fish stock for a chowder, since I made somewhat too much for the chowder. I'll see what miscellaneous meat scraps from the fridge I can toss in with some carrot, onion, celery, and potato and try to work it up into a presentable soup. Tonight's meal is mainly tasting as the product develops: then I'll live a couple of days on soup

(22,685 posts)It's shrimp with tomatoes, feta, oregano, white wine, and parmesan. We're serving it by itself with bread, broccoli, and salad. But it's nice over rice, but the women in my life are trying to watch the carbs. Yeah, like bread isn't a carb.
