for dinner I may finish off my split pea soup with a tomato salad. Depends on how my day goes-right now I got a computer that's giving me fits on data recovery.

that they were every bit as good as, or even better than meat burgers. How can I resist that? With basil-lemon mayo and Parmesan-herb oven fries.

Rogan josh made with lamb shanks,
Cauliflower, potato, and turnip curry,
Lentil and spinach stir fry,
Rice with almonds and coconut milk,
Red peppers sauteed with mustard seeds.

My husband and I have a lot of eating to do...

Glad you are hanging in and on the road to progress. I've not been all that interested in food since the flu, but am boring myself to death with my daily menus. Tonight, baked chicken thighs with thyme, mashed potatoes, a tossed green salad with tomato, red cabbage shavings, and avocado. We'll chow down on those good ciabatta rolls we've been picking up at the bakery.

Appetizer is crudite with hummus and basil pesto.

Tossed salad with raw vegs, like orange pepper, scallion, fennel, celery, carrot, etc.

Beet kabobs with goat cheese. The goat cheese is rolled in balls, dipped in herbs, and drizzled with honey. Also sprinkled with almonds.

Pumpernickel bread.

Dessert will be blueberries topped with a little Greek yogurt.

p.s. cbayer, for the negimaki, I was supposed to use flank steak, but they didn't have it at the store. I used top round, I think. Wish I'd been able to get the flank steak.
