I sauteed the following ingredients in EVOO:
chopped chard
shredded carrots
black beans
corn
chopped onion and garlic
chopped pecans
chopped red bell pepper
Italian seasoning
tofu (duh)
Then, at the end, I seasoned the whole thing with Teriyaki sauce. All ingredients were fresh except for the corn (frozen) and the beans (canned).
I had it for dinner, tonight, and I'll probably take some to work, tomorrow, along with some tortillas from a little market just north of downtown Tucson.
I think this is one of those dishes that can be endlessly experimented with. What would you add, take away, or change? I'd love some suggestions.

(111,245 posts)and you've got a rather classic black bean and corn salsa, also good with tortillas. About the only reason I'd have added tofu to it is if I'd run really short of black beans.
Otherwise, I'd likely have used the tofu for protein and the nuts for crunch without the black beans or I'd have made the black bean salsa, heavy on the hot stuff for me.
Both are good wrapped in tortillas.
In fact, the only thing I don't like in tortillas is ice cream, and that's only corn tortillas.

(30,884 posts)For curry flavor, use curry powder instead of Italian seasoning. Substitute chick peas for the beans, shredded or diced zucchini for the corn; add a few moist raisins or diced apricots; ditch the teriyaki sauce but you can finish it with a little tamari or soy sauce. Also can use a small amount of tomatoes rather than the dried fruit.
For a more Southeast Asian flavor, substitute french style green beans and shredded raw cabbage instead of corn; use shredded red bell rather than chopped and if you like hot peppers add a little diced, seeded jalapeno or serrano OR a sprinkle of red pepper flakes. . Use scallions instead of onion or slice the onion into thin wedges. Skip the pecans and instead chop some roasted peanuts to sprinkle on top of the dish at the end. For seasoning use lots of chopped fresh cilantro or mint or both, fresh lime (or lemon) juice and Thai fish sauce. Add the fish sauce early on but the citrus and herbs should be added at the end of cooking.
Make it more Chinese by using baby corn or bamboo shoots, snow peas, and water chestnuts rather than beans, corn, and nuts. Keep the carrots and bell pepper. Substitute scallions for onions and add some minced fresh ginger or powdered ginger for seasoning along with the soy sauce.
