Or grill them. Either technique does amazing things for blah veggies. After you roast or grill them, then you can turn them into salsa or whatever. They'd be good with herbs, oil and a little vinegar in a salad dressing.

although I've been poor, so I'd probably just make a fresh salsa with them and load it up with hot peppers so nobody'd notice how bland the tomatoes were.

That's for early backyard tomatoes with little flavor. There is nothing to be done with California cardboard but aging them and heaving them at right wing blowhards.
