Related: About this forumAnnouncement: Brett won First Place today at Ohio State Fair, "Beef Wars" Iron Chef!

He won! 1st Place!!!!
Sirloin Steak, 1 pound Bistro Style ...marinated briefly in Dale Sauce rosemary and garlic; seared on LeCreuset grill pan with Brett's own grill seasoning, and finished off in our new portable Breville Convection oven.
Ohio Creamed Corn with bacon lardons, homemade corn stock, creme' fraiche, lime zest and cilantro
Caprese Salad instead of 1st choice Asparagus Salad to meet the additional food group. It was actually the better choice after all.
Caprese Salad with Ohio farm fresh tomatoes, Maldon Sea Salt, fresh ground pepper, handmade mozzarella, balsamic vinegar, extra virgin olive oil, fresh basil, and lots of grated/zester style Parmigano Reggiano on top like "Snow on the Mountain". Top with another scant drizzle of olive oil and splash of balsamic vinegar.
This win helps with scholarships. Next year, after HS graduation....New England Culinary Institute.

(12,209 posts)was sooo stimulating to the audience. So...he had them at bacon! He first setup the steak marinade then started the corn... which starts with rendering the bacon lardons....
They were very impressed with the corn stock too which he made last night. They, the Judges, really looked forward to trying his entree....you could tell by their thrilled expressions and how they hovered over his preparation. Intrigued actually. He even husked the corn demonstrating freshness.

(2,593 posts)That's fantastic! Sounds like he found his calling and is pursuing it full speed ahead.
The Ohio State Fair is a BIG deal. I grew up in south central Ohio and the state fair was a highlight of the summer or us.

(12,209 posts)I have just a very few...need to transfer them to photobucket I guess. Really tired tonight. Others have better picks than I do...I was a nervous wreck.

(12,209 posts)He focused on all, Ohio local ingredients as much as possible...the corn from the farm down the road, the bacon from Landes Meats which is like 2 corn fields away from us...garden tomatoes, our own herb garden basil etc.... The Ohio Cattleman's Association provided the sirloin.
The preparation, packing, transporting everything was a huge endevour....from ramekins, tongs, cutting boards, seasonings, cooler items, skillets, plates...every thing!
Fantastic experience.
Another classmate, Holly won the Cupcake Wars!

(12,209 posts)Brett practiced his steak 2-3 times a week. I didn't mind... other family members were more than willing to judge his steaks. The corn is just great! We've had soooo much fun.

(24,321 posts)Ahhh...the trials and tribulations must have been tortuous!
Just wait till he gets to wear the Chefs Toque and picks you to try new things on!
Ohh...how you'll suffer.
Again, congratulations.
BTW, did you take pics? Can we anticipate a pic thread? Edit.....Aha! I see you answered that in a post above. Look forward to it!

(12,209 posts)The HS Culinary Class has a booth today and Sunday. Brett is working it and staying over night in Columbus. The school is paying for it! The students made cookies and such at the school Thursday for the booth .... He has to do 30-40 hours community service as part of his senior graduation class curriculum and this all counts. Plus, he is enjoying every moment.
I'll get pic's from others and try and post them tonight. I just have to figure it out.
I'm up again at 5 AM....
