Mmm, tasty snack. Mashed sweet potatoes, ginger and butter.

Was looking for a bite this evening, nothing looked good. A nerf ball sized sweet potato has been sitting on my counter for a couple of weeks. So it was toss or cook.

Chopped and boiled it with caramelized dried ginger. Mashed with a hefty dose of butter. A bit of pepper. Spooned it out on a plate. Thought there ought to be something else... Screw it, had it as is.

Turned out to be a neat, sweet snack.

3. butter, brown sugar and a bit of orange juice, melted together

then lightly poured over mashed sweet potato...
I lightly salt the mashed part before I drizzle the mixture over it.

I'm sort of lazy I just wash 'em wrap in foil and bake I make a brown sugar butter and ginger topping for those
