1. Home today for snow

I work for a school district and got one of those blessed 5am calls. Wasn't snowing then but it sure is now.
Since I have time to make a nice dinner and need to use up some things in the fridge, going to try a new recipe for Chicken Primavera Casserole. Chicken & veggies & pasta in a white sauce with cheddar. Steak sounds yummy!

"leftover" and "lamb chops" have never been spoken in the same sentence or phrase.



Good lamb chops are tough to find where I live, but you've given me a mission today - find lamb chops for tonight's supper!

wife and I are trying low carb. so doing lots more veggies
last night we went out, Ruby Tuesday's, had a nice NY Strip
with salad bar and roasted spaghetti squash which was delish.

I made the cornbread from a packet ..... but I added chopped jalapenos and chopped green bell peppers (uncooked) to the mix. Wow! Is that ever good!

Next time I'll add some creamed corn (per your recommendation). I didn't do it this time because I was afraid of making the batter too "soupy".

In addition to being perfect with chili con carne, I bet this corn bread would be great covered with chicken a la king!

but it isn't. i didn't have creamed corn one night, so i made a regular batch and found it to be really dry by comparison.

another great thing about alton brown's recipe is that it's gluten-free. my sister is gluten intolerant and it's sometimes hard to cook around that.

1 stick butter, melted
1 cup sour cream
1 can corn, drained
1 can creamed corn
2 beaten eggs
1 pkg Jiffy muffin mix

Mix together and pour into greased dish. Bake at 350 for about 45 minutes.

Pancetta, sundried tomatoes (from our garden), Parmigiano-Reggiano and goat cheese. Made dough for the crust with a touch of whole wheat over the weekend. I have a DOCG Chianti to go with it too. Can't wait.

Marinating the ribs now. They don't look like any ribs I've ever seen, so we shall see.

Really liked how the bells came out yesterday, savory but short on garlic for my taste. My bad. Going to reheat slowly in this bisque. We'll see, sounds good.

I've never had a wine marinated steak, for some reason. How are you doing them?

And either salad or soup. Or maybe both, depends on how hungry I am at dinner. I'm making the soup now - just beans, vegetables and various spices, basic but good.

Sriracha chicken bites--this is shaved chicken marinated with sriracha mixture which also has rice vinegar, ginger, and garlic in it. Then the chicken bites are dipped in panko and baked in a high-heat oven.

Mashed potatoes.

Zucchini-mint-feta cheese salad.

Cubed thighs marinated in sesame oil, soy sauce, and 5-spice powder, dredged in cornstarch and deep fried, then tossed in a saute pan with a glaze made of soy sauce, honey, a touch of sambal olek, and a lot of mae ploy sweet chili sauce (well, loose sauce reduced to a glaze with the meat). Over white rice with toasted sesame seeds.

Miles better than any takeout, cheaper and faster too!
