1. Spinach/Goat Cheese Salad with caramelized pecans and Cream of Zucchini Soup

Going to the BIG market today, so I can get some things I usually can't get.

Want to use the produce most likely to go bad first.

Plus, I am feeling the need for some raw veggies.

Bill is working during his vacation!?!?!?

4. lamb and artichoke stew in a presure cooker

Ive made this greek style stew many times in a regular pot. Normally It takes 3+ hours. Using a pressure cooker Its about 45 minutes from beginning to end.
I highly recommend this dish

4 Tbsp butter
2 Lbs boneless lamb stew meat cubed
3 onions diced
2 cloves garlic minced
1 6 oz can tomato paste
1 cup white wine
2 14 ozcans quartered artichoke hearts in brine,drained and rinsed
1/2 tsp dried dill weed or 1/2 Tbsp fresh
4 Tbsp lemon juice

in the pressure cooker melt the butter. Add the lamb and saute until lightly browned. remove the meat and set aside
Saute the onions and garlic until soft 8 minutes or so. Return the meat to the cooker and add the tomato paste and white wine.
Put the lid on the cooker and bring up to pressure. cook under high pressure 15 minutes. place the cooker under cold water until the pressure drops and open away from your face.
Add the artichokes,dill and lemon juice.return the cooker to pressure and cook 10 more minutes. Release the pressure under cold water again.
serve over rice

Braved the cold and wind to meet my sister and the twins for lunch. The twins will be 3 a week from today and are very excited about it.

12. Soft tacos and taco dip. non-alcoholic strawberry daquiris, brownies

Basically same ingredients for both soft taco and taco dip (beef, cheese, all the fixins plus a huge bowl of homemade salsa) and the kids love soft tacos but I prefer to dump my stuff on a plate and dip into it with tortilla chips. There's just something about homemade salsa and tortilla chips for me...I only recently discovered homemade raw salsa (I have had canned stuff at relative's houses but never raw stuff) so I've started to crave it. It's healthier than the usual stuff.

Thought I'd make a nice strawberry slush for the kids too, they loved it. My daughter had brownie craving earlier today for studying (she's home during the day b/c of exams) so she made some. We had them for dessert. She makes great brownies.

watching dad's house tonight and there is never much food in the house. he and my sister seem to subsist on eggs, sandwiches and cereal. maybe i'll treat myself to some mexican tonight.
