Yup, that's right.
They come out with more of a crepe type texture than a cake texture. They are yummy and good for you and easy to make!
1 banana
2 eggs
sprinkle of cinnamon or your spice of choice
Mash up the banana. Add two eggs and beat well. Sprinkle in cinnamon.
Pour in an 8" skillet.
Flip when edges start looking done.
(Mixture is kind of runny so it doesn't really lend itself to making individual pancakes. I use an 8" cast iron skillet and it works perfectly.)
Serve with your favorite topping.
I serve mine with a little bit of real maple syrup and a lot of heated up (frozen) blueberries. Makes a perfect topping.

(9,126 posts)Do you cook it on low heat or high? I assume the banana is very ripe. This looks great! We don't eat grains so it's perfect for us.

I've been playing with the heat a bit. Keep it not too high, around low-med I think, but I use cast iron. And I use a coconut oil spray. The last two times I made it I think I had the heat a bit high but even though they got dark it didn't alter the taste, just didn't look as pretty.
The banana is eating ripe, not over ripe like for banana bread.
Yeah, I'm trying to cut back on carbs so this works well for that. It's also good for brunch or dessert since I like to have something sweet at night and I'm trying to get off sugar.

(9,126 posts)I hear you about cast iron and cook in it any time I can. It is the beeeessst. I've been buying it for gifts for my friends who look at me like I'm an old lady, and dutifully I tell them that if they take care of their cast iron, it will last for generations. I'm cooking with one of my grandmother's cast iron fryers! One of the best investments in the kitchen one could make. I love my enameled cast iron like one of the family. I wish I had room to hang them, all black and shiny.
Thanks for the tips! It also not that sweet which I like. So many recipes, I have to cut the sugar in at least half. And the coconut oil would go very well with this.

(15,088 posts)I put two eggs, half a cup of cottage cheese, and half a cup of old-fashioned rolled oats into the blender and then cook like pancakes. High in protein and fiber.
