(36,814 posts)My wife and I lived in Tulsa for a few years. There is an incredibly good seafood market and restaurant there called the White River Fish Market. They are located right by the airport and their seafood is flown in from all over and incredibly fresh. They had the best gumbo I've every had, and I've eaten gumbo all over the states of Mississippi and Louisiana. The place was near where I worked, so I used to bring home their gumbo all the time. On our last visit to the place before we moved away, we were talking to the employees about how much we were going to miss that place and their gumbo. They told us they had just started packaging their gumbo spice mix for sale. We bought some before we left, made it at home, and it turned out exactly like the original. The hardest part is making the roux, which is not that hard. We've been buying their spice mix for the last 15 years.
If you go to their web site and call the phone number there, they will take a phone order with a credit card and mail you their spice mix. Just follow the directions on the bottle. I highly encourage you to follow the directions exactly as stated the first time. If you want to deviate from the recipe after that, go right ahead. I never do. No sense in fiddling with perfection!

(22,378 posts)I am so on it! I was in New Orleans a half a year ago and have been experimenting with cajun cookery. I have the perfect Shrimp Creole finally, and now I'll do the Gumbo exactly like you say. I'll share this with my son post haste, who loves Gumbo and is a stellar cook. This is wonderful. Thanks!

(36,814 posts)Yesterday I bought all the ingredients and I always have some of the spice mix on hand. We have been eating this gumbo for the last 25 years and I can definitely say you won't be disappointed.
One of the ingredients you may have trouble finding locally is called Kitchen Bouquet, so you may want to order that online. I can buy this locally, but some supermarkets don't stock it.

(47,675 posts)Most people hate it. I love it every way except boiled all to hell. Pickled okra is a treat, as are pickled brussels sprouts.

(16,038 posts)file' (dried, powdered sassafras leaves) in the off season..Gumbo texture (a bit of a slimy feel) can be achieved with okra or sassafras.
