I did something great with Cabbage and eggs!
I took a cup of minced Cabbage and fried it in just a little olive oil. Then I mixed up 2 eggs with a splash of milk, a pat of butter a little salt, and a splash of hot sauce!
I added the mix to the cabbage just as the cabbage started to show sighs of browning. Stirred it till the eggs were well scrabbled.
Served with sausage and toast! It was great!
