Chicken Chow Mein recipe

Ingredients
6 oz package chow mein noodles (I used Chuka Soba noodles)
2-3 c cooked chicken, chopped
1 onion, chopped
2 stalks celery, chopped
1/2 red pepper
1/2 green pepper
1 package sprouts
2 c mixed mushrooms
1 small can bamboo shoots
2 green onions for a garnish, chopped (optional)

Sauce
1 c chicken broth
3 T soy sauce
1 t black pepper
2 T rice vinegar
2 T Hoisin sauce

Thickener
1 T corn starch dissolved in 1/4 c water

Directions
Cook noodles according to directions on package, Rinse in cold water and set aside. In a frying pan, sauté onions in a couple tablespoons of oil. Then add all remaining ingredients except bamboo shoots and sprouts. When vegetables are translucent, add chicken and noodles. Mix well. Then add the sauce and warm through. Add water chestnuts and sprouts, then thicken with corn starch mixture. Serve. with green onion as a garnish.
