What's for dinner this Saturday night, March 22?

We are having leek/potato soup, a pickled chayote salad and probably simple quesadillas with roast peppers.

And we will probably eat them one course at a time, cause that's the kind of mood I am in.

Crashed not one, but two big parties last night with visiting guest and another friend and ate everything in site.

We're busy trying to get a room cleaned out to be recarpeted, so I just bought a wild mushroom quiche for dinner. It was cheaper than buying a fast food meal, and faster to boot, since I just eat em cold.

3. Sweet and sour chicken

Rather than the usual stir fry, I'm going to try it in the oven instead. Chicken thighs with sliced carrots green peppers, onions, and pineapple. I basically following the traditional sauce to mix everything together.

I've never done it in the oven before, so I'll check it every 15 mins to see if the sauce evaporates. If it does, I'll just keep adding pineapple juice.

I'm going in...cover me!

It was going to be smoked salmon alfredo, but I cut my thumb with one of my super crazy sharp knives. So I went with the already chopped chicken breast that I had prepared for chicken salad earlier.

I don't think the Ginsu knife folks will be calling me any time soon to make a TV spot for them.

He's making chicken w/potatoes and red pepper relish. Also pasta w/ragu sauce. I'm making the salad.

We're having a guest. Will be fun.

Earlier, we went out to lunch and had a terrific time. Might post more about that later. Have to go make salad now, though.

cbayer, can you tell more about the chayote pickled salad? I passed some over at the market the other day 'cuz I didn't know what to do with them or if I would even like them.

Boil the chayotes whole for about 30 minutes. Figure about one per person. It should have the consistency of a just ripe pear.

Cool, peel and slice into matchsticks. The seed in the middle is particularly delicious and should be eaten as a treat right away.

Make a vinaigrette - I used white wine vinegar, oregano, a little sugar, salt, pepper and a mixture of olive and vegetable oil.

Put some thinly sliced red onion in the vinaigrette and let sit for at least 10 minutes.

Add the chayote and let it sit for another 10 minutes at least.

Serve room temp or chilled.

Really delicious. Tastes like a combination of cuke and pear.

Sure, I'll eat pizza anyway it comes, but I was fortunate enough to have my first college roommate come from Chicago. He used to make a deep dish in an iron skillet, and it changed the way I look at pizza.

It's the only time I'll eat a pizza with a fork! One of these days I'll try to reproduce what he did, but I don't think it will come out the same, since we were dipping quite heavily into the beer stock during his 'lesson'.

I made this one. Trader Joe's dough, a can of diced tomatoes, oregano, Italian sausage and mozzarella. Very simple.

When it comes to what comes first, it's the dough, then the mozzarella, then the sauce, then (layer as you want with veggies and meats). Yes, no?

I like a top of the mozz myself.

...made with some beautiful white corn tortillas from Trader Joe's ---mmmm they smell so good---and some black beans, cubed zucchini and diced red onion that were caramelized separately, black olives, lots of cheddar, chili powder and cumin, and a can of diced tomatoes over the top. Served with snappy radishes, cherry toms, and limeade.

I made a batch of potato salad and BBQ beans for sides. It hit the spot.

I'm itching to haul the grill out of the shed now that it's finally warming up a little and it stopped snowing. It was 60 degrees and sunny here today and Spring Fever has hit me.
