Leftover from a couple of nights ago. I'm having real trouble cooking for two and can't seem to produce less than a vat of chili. We'll have it again tonight and then freeze the rest in dinner-sized portions, so that we can revisit it in a couple of weeks.

Alongside the chili, I'm making a loaf of that 5-minute-a-day bread where you keep the dough in the fridge and bake it off a little at a time over two weeks. That works much better for us than baking a bunch at once.

Also, a salad.

Does anyone else have difficulty cooking for just two? After the kids left home I never did adjust to cooking less.

It takes careful planning..... which I'm not too good at. But I'm learning.

You know what?....... Tips for cooking for one or two would make an excellent thread.

I went for salisbury steak because I only had 1/2 pound of ground beef for three people and needed to stretch it with crumbs and such. I made an onion gravy too, but no mushrooms. Oh, forgot I have a can of that Progresso mushroom cooking sauce. Too late!

I think I subtracted 40 yrs off my life...feeling like a kid, eating comfort food... (too bad Bugs Bunny wasn't on the TV during dinner).



And, I have one patty leftover, with gravy! I'll have that Friday for lunch.

The veggie burgers were a disaster (see my post asking about wtheck to do with the leftovers) but I love my coleslaw. I have a KFC clone recipe but this time I cut out a bunch of the mayo (probably at least half, likely more - yes I have measuring issues, lol, as in I don't) and used fat free plain yogurt instead and I couldn't tell the difference at all. Yum.

tonight was lentil, rigatoni, tomato, onion & basil stew. Very nice.
