Chlodnik--Cold beet soup

Ingredients
3 good sized beets
4 c chicken or beef stock
2 c water
1/2 c yogurt or sour cream
2 T lemon juice
3 T cider vinegar
5 t sugar
3/4 c sliced cucumber
3/4 c diced scallions
1/4 c fresh dill

Directions
Wash beets and place in a large pot. Cover with water and boil until they can be pierced with a fork, about 40 minutes. Rinse them in cold water and rub them to remove skins. Chop into bite-size pieces and place in a soup pot with remaining ingredients except yogurt/sour cream. Puree with a hand blender and chill until ready to serve. The soup should be tart. Add extra lemon juice to taste. Place a dollop or yogurt on top and serve.
