What's for Dinner, Tues., July 15, 2014

I'm starting eggplant parmigiana, but it will be for tomorrow. I'll have to whip up my own tomato sauce, too.

As for tonight, it will be a Mollie Katzen sauce recipe over my other half of spaghetti squash. It will be some type of pesto sauce.

I also made "broccoli and friends" sandwich mix, except I like to put it on a low-carb whole wheat tortilla with mozzarella.

Still cooking from things that are in the 'frig! I have gone to the store, but it's been for things like bird seed and half 'n half for coffee.

I became very nostalgic looking at my Mollie Katzen cookbook. I longed for the days when I lived in my attic apartment in college and cooked up vegetarian food from it for my friends. They would bring wine and other mood elevators and we'd have a wonderful time discussing "ideas of importance," as my student phrased it in last night's class.

I would wear my floaty Indian dresses at these dinners and wear big hoop earrings and bangly bracelets. Sigh. My apartment was $63 a month.

cookbooks (Recipes for a Small Planet, Diet for a Small Planet, The Art of Vegetarian Cooking (the oldest in my collection) and am making some recipes that I haven't made in years.

However, tonight will be baked cauliflower, banana raita, mango chutney and peas with shredded coconut. Get out the Nehru collared paisley dress and some love beads .

Thinly sliced potatoes baked in butter and garlic. Got to use the mandoline for the first time!

I use mine all the time. In fact, I have about four of them. I need to get one of those slice-proof gloves, though.

One of these days.....I won't be so lucky.

9. It was wonderful for slicing the potatoes so they are the same size.

This one has a food holder that you stick on the potato, tomato, etc., to protect fingers.

and other veggies when I make pickles. What kind did you get?

If/when I get one, I plan to invest in a Kevlar glove even though a holder usually comes with most mandolines.

Honestly, just taking it apart to clean it scared the daylights out of me.

I've got good knives and can cut things pretty thinly. I may take longer, but the result is just not that different.

....but I didn't want to cook bacon in hot weather.

So it's omelets with cheddar and salsa and guacamole.

we have lots of leftovers. Sandwiches, potato salad, coleslaw, raw veggies w/dip, fruit platter, watermelon slices...
