Black eyed peas and kale.

Ingredients
1/2 onion, chopped
3-4 cups black eyed peas
2 cloves garlic, minced
olive oil
black pepper to taste
large bunch of kale, finely chopped

Directions
Rinse the peas and put them in a pot and cover with water by a couple inches. Bring to a boil and cook for one minute. Turn off heat, cover, and let sit for one hour. Drain peas and rinse them, then fill pot with fresh water and simmer for 35-45 minutes until tender. Drain and set aside. In a large frying pan, sauté onion and garlic in olive oil until translucent, add kale and sauté until it cooks down--about 10 minutes. Add peas and sprinkle with black pepper and serve by itself or over pasta or quinoa with freshly grated parmesan cheese.
