we polished off the rest of the pulled pork last night, so we'll dig into the smoked chicken tonight. we have the fixings, so maybe it'll be pita style.

(146,218 posts)I had thawed out my delicious meatballs in red sauce and saw that there was gnocchi in the freezer. So I am making a gnocchi, meatball, mozzarella casserole. It's about to go into the oven and should be pretty delicious.
Tomorrow shopping day, so I made a salad out of what needs to go.
As usual, I am very excited about a big trip to the grocery!
Are things better in fizzgig land?

(24,146 posts)we had a compromise picnic yesterday. i originally wanted to head up the cane, but that wound up not being an option. then i wanted to eat by the river and we were chased away by mosquitoes. so we settled for the picnic shelter in the park.
i told the husband we're heading up the canyon in a couple of weeks no matter what.

(146,218 posts)Which canyon are you going up? Are the cabins you used to rent still there or were they washed away?
fizzgig
(24,146 posts)the cabins are still there up the big thompson, we just haven't had the money to go for awhile. if my first plan for our anniversary this year doesn't pan out, we'll stay there and spend some money in estes.

(146,218 posts)My mother is headed up there this weekend. I just gave her my car while I am over here and she is loving it. She's 84 and I feel much better with her driving around in a better car.
I think the cabins we stayed in right up the road on big thompson are back in operations.
What is your first plan for your anniversary, pray tell?
fizzgig
(24,146 posts)which is the weekend before our anniversary. the expanded plan is to spend a few nights in denver, have fancy dress up dinner the night before the show and hit the zoo or a museum the day after.
either way, i want us to get away for a few nights. it's been a few years since we've been able to.

(146,218 posts)Are you familiar with Le Central in Denver ("the affordable french restaurant" ?
http://www.lecentral.com
The owner/chef is a friend of my mothers and I worked there for a few months back in the 80's.
You might really enjoy it and I hope you check it out on one of your trips to denver.
Getting away for a few nights can be a really wonderful spark that some candles need from time to time.
Shine on, my friend.

(106,886 posts)He has old friends there, usually spends 2-3 months at their place, helping out around the farm (1/2 day) then skiing or hiking the rest of the time. Or just laying back. At 68, he's doing a lot more laying back these days. Which is fine with me.

(24,146 posts)i've never been up there, but fall is a great time to visit.

(35,619 posts)I'm going to use chicken sausage for the stuffing. Going to top with Swiss cheese and caramelized onions.
This should be a challenge for the low-carb, no-wheat person.
This will be late late late, as I don't even get home from my teaching job until 10:30 p.m.

(146,218 posts)Try out this recipe. I swear, it was the best I have ever had.
I did not use panko, but made my own breadcrumbs from some day old bread that I toasted.
