What's for Dinner, Mon., Jan. 5, 2015

Asian cole slaw and mesquite-flavored pork loin in the slow-cooker. When it is finished, I make glaze using hot pepper jelly (equal parts jelly, water, and a few teaspoons of vinegar).

The slaw is made with Napa cabbage, and has sliced yellow and orange peppers, a little grated carrot, and chopped green scallions.

p.s. Fresh raspberries and vanilla yogurt for dessert. Top it with toasted sliced almonds and a few dark chocolate shavings.

peas, sauteed spinach, and leftover brussels sprouts.

I need to feel noble about diet today. Making several batches of Xmas cookies to use up ingredients and mail to the college student.

I found that Trader Joe's thai spiced peanuts are great in that dish. And if plums are in season, I slice one up and add it, too.

some leftover pintos, to which I'll add some diced jalapeno. I have a cuke that needs attention, so maybe some cuke and tomato salad.

Never had moose but a dear friend just returned from Alaska and brought us that and some gorgeous salmon. We're saving the salmon for a special dinner. I have to admit the burgers smell great and I'm looking forward to them. I feel kind of Sarah Palin-ish, though

a few days ago and made mashed cauliflower. It was good but we had a lot left. I tried to make pancakes but they didn't hold well or taste great. So I pureed it, added chicken broth, a little garlic, onion, and curry and a lot of cheese, came out a delicious soup with a nice color.

i'm sauteing some red onion, red bell, garlic and carrots in butter, then i'll toast the rice and use beef broth for the liquid. it's what we had on hand and i porked out during my vacation, so i feel like i need something a bit healthier.
