I didn't get my chicken thighs made, so I'm going to start them now. They need to marinate. Black pepper and honey chicken thighs.
I'm also roasting tomatoes and beets, too.

(106,886 posts)Corn and really ripe diced serranos, sautéed, I guess.
Salad with a bunch of stuff on hand - romaine, tomato, onion, zucchini, cucumber, garlic, basil. Some sort of dressing.
Looks like "some sort of" is the theme.
Homemade dough, mostly with bits of leftover vegetables from other projects ... including some leftover Prosciutto.

(146,218 posts)I have a big meal planned for tomorrow and will probably invite guests. I am going to make a Sopa de Albondigas, which is a meatball soup and a Caesar salad.
Tonight? Possibly quesadillas with ham, cheese and tomatoes and I have a can of Corn Soup. Simple while I settle into the new environment.
Enjoy your chicken thighs and roasted veggies!

I generally use whatever cheeses I have, especially odds and ends- tonight the odds and ends were parm, swiss, jack, american and fontina. A little frozen summer zucchini and/or celery, is also really good in this recipe.
Since I didn't have pepper jack, I added the dregs of the jalapeno jar and about a quarter tsp of red pepper flakes. My husband likes a really thick soup, so I added a few more potato flakes for him. For me, I like thinner, so I dish myself and add a little milk, then heat in the microwave.
