Cauliflower, potato, and green pea curry recipe

Ingredients
1/2 head cauliflower, cut into bite-size pieces
4 potatoes, cute into small pieces
1 onion, chopped
2 cloves garlic, minced
2 c frozen peas
vegetable oil--I use avocado oil
2 c chicken or vegetable broth

Spice mixture
4 cardamon seeds
2 cloves
1 T cumin
1 t cayenne
1 T turmeric
1/2 t cinnamon

Directions
Brown the cauliflower and potatoes in a large skillet--about ten minutes. Remove and set aside. Add onions and cook until translucent. Then add garlic and cook for a minute or two Add spices and cook for a minute. Return cauliflower and potatoes to pan and vegetable broth, reduce to simmer and cook for 30 minutes. When it starts to thicken add peas, heat through and serve over basmati rice.

Roasted Cauliflower Recipe with Bacon and Garlic

Servings: 4 Prep Time: 5 Cook Time: 20

This Roasted Cauliflower recipe only takes 5 minutes hands-on! Sometimes, we add fresh grated cheese at the end, just before serving.

Ingredients:

1 head cauliflower, cut into small florets
6 cloves garlic, sliced thinly
3 strips bacon, cut into bite sized pieces
2 teaspoons olive oil
sea salt and freshly ground black pepper to taste

Directions:


Preheat oven to 375F. On a baking sheet, toss together the cauliflower, garlic slices, bacon and olive oil. Roast for 20-25 minutes until bacon is crisp and cauliflower is cooked through. Season with the roasted cauliflower with salt and pepper to taste

I omitted the garlic (I didn't have any) and I've tried with cheddar cheese and Parmesan cheese. They are both good.
