what's for dinner - saturday, jan 24th

it's a bit of a cooking day here. dinner will be brown sugar and balsamic glazed pork roast with caramelized onions and fried brown rice. i will also be making hummus, tabbouleh and pasta salad so we can graze tomorrow and husband has lunch stuff for the first part of the week.

i really want to make a batch of brownies, but that's not an option with the oven not working >_<

We can tell you are on a home cooking binge after your time of dining in restaurants for a week! All that sounds delicious, especially the glazed pork.

I think I'm going to make a pizza tonight, but first I have to make the crust using almond flour or coconut flour, not sure which.

For toppings, it will be peppers, onions, and ground beef. And a run to the wine store is in order, too.

i wanted to cook dinner for my in-laws, but that didn't happen and i'm a bit bummed. oh well, i'll do it next time. i was really motivated to do all the cooking today so i don't have to do anything tomorrow, i still need to recover from our trip.

Last night's pork tenderloin, peppers, sprouts in peanut sauce; some slicing and dicing but otherwise pretty low intensity. And tasty.
