What's for Dinner, Tues., Mar. 3, 2015

Kabocha squash soup with apples and bacon.

Roasted vegetables tossed with herbs, olive oil, and garlic. A few are: carrots, yellow squash, onions, broccoli, yellow and red peppers.

I only used up half the chicken legs the other day, so I'm trying a new recipe for them--same idea, mustard and rosemary coated, also with Judy's bread crumbs. Have had them marinating in buttermilk all day.

Snowing and alternating to ice, so I declared myself a snow night and I am not going out. Too treacherous.

with a cucumber-tomato-sweet onion salad.

A day off today, decided to take a nap - that didn't work out because a dang B-2 Stealth bomber was flying patterns over my house! Stealth my arse - they are loud as hell!

next door on their motorcycles or 4-wheelers. There's a kid who is about 5 yrs. old who can operate anything on wheels better than any adult I know. Don't know how, but he always knows whenever I try to take a nap and he starts his runs up and down the fence line, outside my bedroom window. I've been getting extra good naps lately with the foul weather, but spring/summer, I'll probably go napless.

Still busy 'spring cleaning', so didn't invest much energy in dinner.

Thawed a couple of boneless, skinless chicken breasts and sauteed one. Ate some of the carrots from Sunday.

called "Cantina Bowls" where you get your choice of whatever you want from their hot bar. They have everything: rice, beans, queso, peppers, onions, radishes, cilantro, chicken or beef, jalapenos, mushrooms, etc. They have several different types of salsas and sauces, too, plus homemade tortillas. It's a great lunch and the prices can't be beat. The best thing is the that the owner and servers are so nice and congenial. We always leave a good tip, and promote the business whenever possible.
