What's for Dinner, St. Paddy's Day, Tues, Mar. 17, 2015




I know: corned beef and cabbage. Or Irish stew!

I just made mine; the difference is that I'm taking the vegetables (carrots, potatoes, onions, and cabbage in broth) to campus to a union meeting. Another union member is providing the corned beef. Should be fun!

a sandwich or cereal is most likely.

starting tonight, my work night will be extended an hour every night for the next two weeks, so we'll probably punt this week and i'll do a load of cooking over the weekend. i also have my shiny new 30-minute meal cookbook, so maybe i can motivate myself to make dinner before i go to work.

we'll do corned beef and cabbage at dad's in a couple weeks.

I just have a hankering for fried chicken today. So, I'll head to the grocery deli and pick some up. Mashed spuds (sour cream and chives) and something to do with carrots - probably roasted w/ some garlic.

ps: the leftover corned beef? I'm looking forward to a reuben sangwich for lunch tomorrow, then some hash with Brussels sprouts after that. And that will be my corned beef experience for another 6 months. LOL!

Would love to have some corned beef, but I have been away from the market for awhile and have nothing I would need.

We just pulled into a town and it's sushi out! What's more Irish than that, lol.

7. Corned beef, curried roasted cabbage and carrots. Recipe:

CURRIED ROASTED CABBAGE

Makes 4 servings

Ingredients

1 medium head green cabbage
1 yellow onion, sliced into thick wedges
2 Granny Smith apples, peeled and sliced into 8 wedges each
2 tablespoons olive oil
1 tablespoon curry powder, hot or mild
Kosher salt and ground black pepper
1/4 cup currants
1/4 cup toasted almonds slivers
Lemon wedges, to serve

Directions

1. Heat the oven to 400 degrees F. Line a rimmed baking sheet with foil.

2. Cut the cabbage into quarters, then cut out the thick stem and core from each piece and discard. Slice each quarter into 4 wedges for a total of 16 pieces.

3. In a large bowl, combine the cabbage wedges with the onion and apples, then drizzle with the olive oil and toss gently to coat. Sprinkle the curry powder over everything, coating all sides of the cabbage mixture. Season with salt and pepper. Transfer the mixture to the prepared baking sheet. Bake until tender and all sides are golden, about 20 minutes, turning halfway through.

4. Sprinkle the currants and almonds over the cabbage, then toss lightly to mix. Serve with lemon wedges.

Nutrition information per serving: 250 calories; 90 calories from fat (36 percent of total calories); 10 g fat (1.5 g saturated; 0 g trans fats); 0 mg cholesterol; 40 g carbohydrate; 11 g fiber; 20 g sugar; 5 g protein; 170 mg sodium.

Been wanting to try the recipe for weeks.
It was great and no 'stinky' boiled cabbage odor either.

About the same percentage here, too, but I grew up in a little Irsh town, and I recall many St. Paddy's Day celebrations growing up. This little town I grew up in would gain about 10,000 additional visitors on St. Patrick's.

Our little celebration was a lot of fun. The campus was fairly empty, as it's spring break, so we were able to get a nice room to meet in. We had corned beef and cabbage, carrots, onions, and potatoes. Potato cakes. The most delicious soda bread with Irish butter. For dessert, we had these things called "Irish spuds," which looked like little potatoes but they were really a candy--some type of coconut center with cocoa dusting to make it look like a little potato. Fun. I really enjoy my fellow union members--true camaraderie.
