Awesome sandwich!

On buttered toast spread cottage cheese, sliced cucumbers, sliced tomatoes and sliced avocado. It's a bit messy but delish.

I made another today but without avocado and with a bit of thin sliced ham. I've been pondering all the different things I could add to this sandwich, like fresh basil or tamari sauce. Maybe even bacon!

Sometimes I take an avocado, use a fork to chop/mash it up. Add chopped walnuts, lime, salt and pepper. One avocado makes two large sandwiches. Absolutely amazing.

I used to make this cream cheese spread all the time It s similar to yours. I got the recipe out of the local paper and it was credited to a local restaurant that is no longer around.

Mix the following ingredients:

8-oz cream cheese
little bit of finely chopped carrot
little bit of finely chopped green bell pepper
little bit of finely chopped radish
1 green onion, finely chopped
1 tablespoon Cajun seasoning.

To be spread on a heavy multi-grain bread, topped with crisp fried bacon and tomato and avocado slices.

I used to work for a software company and around payday, the young programmers would be broke and hungry. I'd make a container of the cream cheese spread and take it to work, along with a loaf of bread to feed those young guys.
