Squash and sausage

I am not a sausage fan. I don't think I've ever actually purchased it. But a friend gave me some farm-fresh pork sausage and I never turn down free food. Then I found and adjusted this recipe and it was absolutely fantastic.

acorn squash
sausage
1 onion, chopped
1 clove garlic, chopped
bread crumbs
1/4 c. chopped parsley
1 egg, beaten

Steam squash, skin on. Fry sausage until brown and crumbly. Add onion and garlic and saute until onions are soft. Stir in bread, parsley and egg. Remove from heat. Cut squash in half and scoop out seeds. With a fork mash squash in the skin. Spoon sausage mixture over squash. Place in oven and bake 15 minutes or until top is golden brown.
