and let its own flavor shine through. Salt, pepper, lemon, and parsley will do it.

The best way to cook good frozen fish is with a rub and a stovetop grill.

The best way to cook not so good fish is Portuguese style, with onion, garlic, peppers, and tomato all wrapped up in a parchment parcel with the filleted fish.

I have never used a rub on fish. The problem I have here in Richmond is finding fresh.

For the second time I bought wild caught cod from Costco. It it the whole fillet from head to tail. It's not cheap, and I don't know if it's been frozen at some point or packed in ice. I think ice because the whole fillet is folded onto itself.

I use your first cooking method and it falls apart if you are not careful.

I dip the fish in a milk and egg wash, then in bisquick and repeat. Then fry nicely in olive oil until blackened, finish in a 350 degree oven for about ten minutes.

I pair this with stir-fried veggies.
