What's for Dinner, Sat., March 5, 2016

I'm having a friend over for dinner tonight, so I'm making Sichuan Beef Noodle Soup. It has beef shank, baby bok choy, garlic, daikon, noodles. It may be a little on the sweet side because it calls for brown sugar, soy, and chili paste.

I hope to think of a way to use some of my parsley pesto in an appetizer.

For dessert, "cuties" (like tangerines) and oatmeal cookies.

We'll be starting off with spicy bloody Marys and moving to red wine later.

My friend needs a big hug, as a parent passed on a week ago, so if this turns out, I may give her a container to take home.

will be serving that for Sunday lunch tomorrow.

Tonight, we're cleaning out the refrigerator. Baked sweet potatoes, black beans, mixed greens and cornbread as well as the ever present tomato salad.

(RI weiners with a "snap&quot , hand-cut fries, and a salad of marinated veggies (assorted peppers, mushrooms and olives).

And a beer. Or three.

And a movie - "Bridge on the River Kwai" on TCM. (It's a guy thing...)

made a bunch of salsa chicken in the crock pot and
made a few of these.
the rest of the chicken will be made into
chessy chicken frito pie …

I use Frontera's chile lime taco sauce. Pour on boneless skinless chicken thighs and bake at 350 for about 45 minutes. Shred it up and put in freshly fried taco shells, top with jalapenos, onion, cilantro, guacamole and a squeeze of lime. MMMM and don't forget the margarita!
