What's for Dinner, Mon., June 20, 2016

Cold poached salmon. I have one sauce already made, and I'm also thinking of using my fresh dill to make another.

Salad will be pear, arugula, and pine nuts.

Dessert? The rest of the chocolate Talenti (not much left) with peanuts on top.

p.s. there may be other odds and ends, since I have to clean out the refrig and freezer. The RG is arriving tomorrow, and he's bringing me lots of goodies. Plus the Fancy Food Show is starting in NY and he's going to be working there the entire time. Nine days, I think.

1. Vegetarian 'chicken-less' fajitas

Featuring Trader Joe's "Chicken-less" strips.
Green/Red Pepper/Onion
Chili powder, cumin, mexican oregano, turmeric

Refried beans
Spanish rice
Corn (canned, cuz it's too hot to boil fresh today)

Citra pinot grigio, and maybe some watermelon slices for dessert.

(I do have an eggplant I've got to cook up, though. Decisions, decisions...)

and boiled egg - in my pressure cooker. It was goooooddd. And an avocado for dessert. Though I DID buy one of those mini-watermelons, so I'll be able to nosh on that throughout the week, yay!
