My two-hour chicken: douse the parts (breasts and thighs) in spices, cover and roast for an hour. Then, remove foil, baste in the juices, and roast another hour. Meanwhile, give onion, red peppers, and potatoes the same treatment, except that they get half the time. Yum.
My first real dinner since the last chemo!

celebrate that milestone! I couldn't eat spicy food while doing chemo, so kind of went overboard for awhile. It's just awesome to have your appetite and normal taste back. Chicken and veggies sound great.

Chicken stir fry here: Sunday means I have time to chop and cook all the veggies; stir fry means my husband and sons eat lots of veggies without complaint.
