Roasted tomatoes and zucchini with ricotta. Roasted Brussels sprouts with pistachio nuts and red onion with balsamic-honey sauce. Tossed green salad with chicken.
For dessert, fruit salad, which consists of sliced banana, green grapes, fresh strawberries and blackberries. Also a Pink Lady apple.
I used my slicer to do the tomatoes and zucchini. Really made it fast. Just tossed it all up with olive oil, fresh basil, and garlic and put in convection roast at only 250. I also used the slicer for the Brussels sprouts, too! In addition, I sliced up some capacola and tossed it into the mix.
As long as you're careful, the slicer makes for fast, easy work. I came close at one point, though; have to be eternally vigilant!
I think I'm going to make some kind of dressing for the fruit salad.

Going to get some Costco quinoa and chips.
Sauteed with a ton of spinach. I'll probably sprinkle some Reg-Parm over it all while in the pan...yum. The Guy is not a shellfish lover, which allows me to be selfish (jk). So I defrosted a homemade mini chicken pot pie for him, and I'll make him a salad.
Tomorrow, I'm making a Blackout Cake! It's from the Cooks' Country book, and it's supposed to be a version of a cake from Ebinger's, the famous Brooklyn bakery. My mother is coming for a visit Monday, the first time she's been able to visit since I moved here to Florida eight years ago, and this was her favorite cake way back in the day. It's a three-layer chocolate cake with chocolate pudding-esque filling and frosting, and it's covered in cake crumbs. I hope it comes out well -- this was the reason I bought that cookbook!

I had to split the layers. Fill and frost with the pudding I made, then coat the cake with crumbs made from the fourth layer.
Mom loved it! Although she didn't eat much for dinner she wolfed down the cake. It was a big hit. I froze a slice for my daughter, who's arriving Thursday.

(2,016 posts)with baby purple potatoes and corn on the cob. I'll throw in some Portuguese sausage into the mix, too. Everything will be coated in a butter-garlic spice sauce after cooking. Cara cara oranges for 'dessert'.
Served with rolls of paper towels.
