I'm making lasagna in the slow cooker, which means I am grilling the zucchini and eggplant. Yeah, that's how you keep it from shedding so much vegetable juice in the slow cooker.
I have sauce already made. It took me about 30" to slice all the zucchini and eggplant with the electric slicer. This is a low-carb recipe, so I'm using no noodles. The zucchini and eggplant act as the noodles.
The other veggies I'm putting in are fennel, grilled leeks (I'll chop 'em afer I grill them). Peppers, both red and green.
To stave off the hunger, as this will prol'ly not be ready until about 9 p.m. (!), I'm having beet/goat cheese/toasted pecan salad using red leaf lettuce.
If I still want dessert, it will be an apple and some yogurt topping.

(3,040 posts)Just a regular cheeseburger with a slice of american and a slice of pepper jack on a buttered and toasted bun with ketchup, mustard and red onions. The fries are frozen Arby's curly fries (which are delicious).

(9,822 posts)from last week and will top with parmesano. Combined a tiny bit of leftover turnip greens with the leftover cabbage from yesterday. Added a few new tomatoes to the leftover peppers and onions. The one new thing I'm adding today is.......asparagus!!! I'll put it in the oven to roast with olive oil. Love, love, love this time of year (well, except for the stinky asparagus pee!)

(17,434 posts)I made some a few weeks ago and tweaked it a bit this time.
Chicken, Sausage Shrimp, Bell Pepper, Onion, Celery, Garlic, Canned Fire Roasted Tomatoes, and Chicken Broth.
Medium grain rice instead of long grain.
Less rice is the main difference, achieving a higher meat and tomato to starch ratio was my goal.
Also a lot more garlic this time.
It smells so good.
It's time to try some.

(1,706 posts)The home version has more kale. My son made it, so the potatoes are rather rough-chopped, but the broth is creamy and the sausage is spicy, good on a cool and rainy night.

so I said we don't I take you out for Mexican?
she liked that idea and brightened up noticeably.
so we both had chicken fajitas
no beans, no rice, no Tortillas. (low carb)
had the salad and guacamole.
it was very good ... and both of us
are very happy ...
