was never having to eat cottage cheese again.

While you could curdle soy milk and drain the curds and call it cottage cheese, it's probably simpler to get some soft silken tofu and mash it up. It would be the same thing with less trouble and ready for flavoring.

mash silken tofu in a blender, add a few suggested spices, hand crumble extra firm tofu, let sit at least an hour.
I do eat cottage cheese on days when cooking is too much hassle & grief to cook.

lasagna...and I was mortified at first...always used ricotta but she is lactose intolerant...but people rave about my lasagna now go figure.

4. Sorry didn't notice you said vegan...they had some in Berry's Market but I don't recall the brands.
