I am recovering from neck and tongue cancer, and my salivary glands were damaged, so skins were hard to swallow. Delicata skins are tender, easy to chew and swallow.

Slightly off topic, but last year I bought Savory Spice Shop's shallot salt & used it on my roasted butternut squash, along with olive oil, rosemary & roasted garlic cloves & it was divine!

I like to stuff them with fresh spinach or chard,a little ham or bacon, topped with gooey melted cheese.

5. "Rediscovered"? Famers around here have been growing them for years and I've been stuffing them...

all that time. Once called "sweet potato squash" because of the flavor, but that flavor seems to have changed over the years Biggest problem is that they are "all seed" with not enough meat on them. It does make them easier to stuff, though.

Acorn squashes are all over the place now, and my favorite to stuff. Or just roast and eat plain. Cheese pumpkins are in, too, and they're too big for one or two people, but they are absolutely the best for pies and cakes.

hint: Halloween pumpkins usually kinda suck for eating, but hollow one out and use it as a bowl to serve pumpkin soup. (Soup made from butternuts and cheese pumpkins, of course.)

I have been on a searching for the patty pan squash, but no luck. The acorn is a favorite here.

Delicata wasn’t in our stores until it has gained new popularity.

they get gone in a hurry. I think blue jays and cardinals like them and know that possums and probably raccoons, too. Cardinals love canteloupe and honeydew seeds as well. Some people like to clean and roast pumpkin seeds, but I don't care for them so I always donate them to the critters, too.
