What's for Dinner, Sat., Jan. 27, 2018

Coconut Rice Salad with Mango, Bell Pepper, and Lime. It also has grated ginger, cilantro, lentils, and cumin. Recipe is from Food52’s Mighty Salads cookbook.

Earlier in the day I made tuna salad with avocado and bacon. That's not for dinner unless my salad leaves me hungry.

Dessert will be French vanilla rice pudding with chopped fruit–pear, mint, red grapes, and blackberries.

Unfortunately no coconut, cilantro, mango or lime available right now because I'm just about to throw together a rice-veggie-nut salad.

Mine'll be based on Trader Joe's brown rice medley, which includes black barley and Daikon radish seed, cooked just til still chewy. From there, it's clean out the crisper time, but there're a lot of good things in there. I like to get minimum half fresh veggies, no kale available but there is cabbage. Add in some toasted nuts and dried fruit. The vinaigrette dressing will include the lemon I do have and also get a splash or two of fish sauce because that seems to work.

Some sliced leftover grilled pork on top tonight and serve it on some lettuce so it feels like dinner to my husband. The best part for me, though, is a few days of leftovers for quick lunches. Love the textures.

with some lemon, butter, dill and garlic. Broccoli and baked potatoes. Aldi's wine of the week was a dry Chardonnay, so that's what we're having with the fish.
