What's for Dinner, Wed., Jan. 31, 2018

I'm kind of excited about cooking this dinner tonight:

Hungarian Mushroom Soup

Cauliflower Macaroni and Cheese

The mushroom soup will have both Baby Bellas and white button mushrooms. As you probably know, Hungarian Mushroom Soup has sour cream in it. Ummm, and it's so cold here, so this will be wonderful for a winter evening.

The cauliflower mac 'n cheese has a sliced seranno in it, so there will be a bit of spiciness. It's topped with toasted breadcrumbs.

Dessert will be blackberries served over a little rice pudding.

It's been a while since I made one. I'm looking forward to it! With a baked potato (crunchy skin always appreciated), and steamed green beans.

I was on the fence as to go the "ketchup or gravy" route. But since I just cleaned the kitchen/dishes, I'll take the easy way out and go ketchup...

tater tots, rye bread, coleslaw. There was also rice and beans for the vegetarians. Dessert was jello and home made donuts.

I made a LOT of coleslaw.

My next stint at the shelter will be in March.
