$1.59 for a pound of French-grown shallots

We love our Burmese neighbors and their store here ... these would have been twice as expensive in the supermarket or farmers market.

I may pickle some, need to find uses for the rest. Any favorite uses for shallots, C & Bers?

at all with the Instant Pot our daughter got me for Christmas. At least if you don't include the heat-up period. Just eliminate most of the added liquid. Thanks for the recommendation.

..best done on a mandoline, soak for an hour in milk, drain, toss with half flour and half cornstarch plus a slug of celery salt, and fry them up. They're so much better than French's onions it's ridiculous.

More seriously, they're invariably a superior substitute for red onions in literally any recipe, and an indispensable component of French cookery. I make a half gallon of bearnaise every day at work - I will pay $7/# at whole foods across the street if some dumbass (myself) forgot to order enough for the day.

I also make a honeyed-shallot&blueberry compote that's just epic on waffles...but that's one of my few truly secret recipes

Make it the same as one would the onion soup, but using shallots instead. It's also quite lovely.
