Related: About this forum$1.59 for a pound of French-grown shallots
We love our Burmese neighbors and their store here ... these would have been twice as expensive in the supermarket or farmers market.
I may pickle some, need to find uses for the rest. Any favorite uses for shallots, C & Bers?

(58,785 posts)at all with the Instant Pot our daughter got me for Christmas. At least if you don't include the heat-up period. Just eliminate most of the added liquid. Thanks for the recommendation.

(4,737 posts)..best done on a mandoline, soak for an hour in milk, drain, toss with half flour and half cornstarch plus a slug of celery salt, and fry them up. They're so much better than French's onions it's ridiculous.
More seriously, they're invariably a superior substitute for red onions in literally any recipe, and an indispensable component of French cookery. I make a half gallon of bearnaise every day at work - I will pay $7/# at whole foods across the street if some dumbass (myself) forgot to order enough for the day.
I also make a honeyed-shallot&blueberry compote that's just epic on waffles...but that's one of my few truly secret recipes
