What's for Dinner, Tues., May 1, 2018

Ham sandwich on brioche roll with the usual--lettuce, tomato, Dijon mustard. Potato and egg salad.

Here we are finishing the last of the fish from the freezer that my husband caught last fall. Baked in foil packets with lemon, butter, and baby spinach.

Trying to decide whether to serve mashed redskins or rice pilaf along with it.
