Lamb stew with potatoes and carrots.
Tossed green salad with blueberries, candied pecans, and shredded carrot. Sprinkled it first with salt, then a little cider vinegar, and after that some mirin. Then a little drizzle of olive oil.
BTW, that's a cooking tip from the RG, who says to do it in that order because the vinegar makes it easier for the olive oil to adhere to the leaves when you put it on.
For dessert, tapioca pudding and bananas. Toasted walnuts on top.

(2,302 posts)They sound and look so good I couldn't resist. Potatoes cook in the same pan and get the rosemary, garlic and lemon seasonings.

(130,861 posts)I cut it in half but followed the recipe faithfully otherwise. The liquid cooked off, and although I wouldn't call the chicken exactly crunchy, it browned up nicely. The flavor was wonderful. I might try making it with thighs or chunks of breast meat, just so that there's more of the chicken to eat. The potatoes rocked...the combo of lemon, rosemary, and garlic was perfect.
Winner winner chicken dinner!
Thighs are my favorites.

Serves 1, generously
4 ounces pressed dry extra firm tofu, big crumbles
1 c shredded cabbage
1/2 c shredded carrots
1/3 c minced onions.
2t minced garlic
2T go-chu-chang sauce. - Korean BBQ Sauce
1/2 t toasted sesame seeds
2t sesame oil
Make rice
Dry toast sesame seeds~2minutes
set aside.
Saute tofu crumbles in sesame oil till warm, push to side of pan.
Saute onions, then garlic~3-4 min, mix with tofu.
Saute carrots & cabbage till tender crisp. Mix everything all together. Add 2T of the go-chu-chang sauce. Serve over rice, sprinkle with sesame seeds.
The original recipe called for 4 ounces of ground chicken orpork, but I've traded out the meat. It's an easy meal to tweak.
