Potato Salad Recipes, submit yours

I eyeball this

red skin potatoes
minced onion & celery
real mayo
few tablespoons of stone ground mustard to make the mix a light yellow or to taste.
Salt & Pepper, maybe a small bit of granulated sugat for my audience.
Cut in half hard boiled eggs
Paprika & chives for garnish.

For him, it’s a texture thing instead of flavor so I dice or purée them small to he can’t detect them. It works. Is it a flavor or texture thing for you, I’m curious?

I can detect them in infinitesimally small amounts, and they render inedible any dish that contains them. I can tolerate small amounts of well-cooked onions but the raw ones are galactically disgusting. My brother is the same way. Our mother would try to sneak onions into things by chopping them into very small pieces but we always found them. I've been known to pick tiny onion pieces out of salsa and pico de gallo.

You and your brother must have a (genetic?) sensitivity that makes them taste as they do to both of you. I know what that's like. The super-premium French perfume, Joy, smells exactly like bug spray to me. The first couple of times that happened I asked everyone around why the unfortunate wearer smelled like she was doused in insecticide. They just smelled an expensive perfume if they noticed the scent at all. I finally asked a relative who was wearing it what perfume she had on and she told me it was Joy. Just a weird misfiring of the olfactory receptors (and in your case, possibly the taste buds) that screw up a particular smell/taste is my guess.

or the damn things wouldn't be in every damn thing you order at a restaurant so you have to pick the little bits out in order to eat the damn thing. It must be a genetic thing. We also hate most members of the cabbage family (especially Brussels spouts, kale and cauliflower), which taste extremely bitter to me. On the other hand I do like cilantro, which some people say tastes like soap.

As to perfume - I've always thought most Avon products smelled like bug spray.

The hot potatoes soak up the apple cider vinegar flavor so there is a bit of tanginess to the potato salad but it doesn't water down the dressing. I don't use any sugar but rather than dill relish I usually put in sweet relish along with diced celery and onion.

I don't have a standard recipe I use - generally I check out several recipes and put in what I feel like that day depending on what I have around.

I make a "fruited" coleslaw,

Cabbage, shredded or chopped
Apples
Grapes
Raisins
Dates
Pecans

Mix it up with a dressing made from mayo or plain yogurt with a pinch of nutmeg added.

Pretty darned good!

With a tart dressing. Mom made a cheap one with apple cider vinegar, a little oil and Lawry's seasoned salt. For a creamier version, I add a little mayo - or just use Marzetti coleslaw dressing with maybe a little extra vinegar.

Fruit in coleslaw just doesn't sound right to my traditional taste buds.

Now if those ingredients were put together and not called coleslaw I might could get around that block.

but I fry 4 or 5 pieces of bacon and crumble them into the potato salad and add the bacon grease to it as well.Yumm!

Lately I've been replacing some of the mayo with sour cream, adding some chopped parsley, chopped chives, dried dill weed

Sometimes crumble some crispy bacon on top. And eggs must be finely chopped, I hate big chunks of hard boiled egg whites. A texture thing.
Mom used to use chopped green olives instead of pickles ( ) but I'm the only one who likes olives so I'm outvoted on this one.

Small potatoes any color, unpeeled (slice 1/4 in coins)
Red onion (thin quarter moon slice
Red bell pepper (small dice)
Celery, lots (thin slice)
Bacon, lots cooked crispy and crumbled

Cook potatoes til done, drain and put in a bowl with other veggies and bacon.

Pour over this dressing while potatoes warm:

Rice wine vinegar, can use apple cider (2 tblspn?)
Fresh lime juice (1 tablespoon?)
1/4 cup (ish) miracle whip
Salt
Pepper

Amounts depend on amount of potatoes.
Whisk and pour over warm potatoes.

Yummy.

First off, I rub the entire inside of the glass bowl with a fresh, smashed garlic clove or two!

I then add:
Chopped green onion sprinkled on top in addition to the sweet onion.
Chopped Claussen's Kosher dill pickles
Chopped red radish
A couple of spoonfuls of Miracle Whip in addition to Best Foods mayonnaise

Yes to red-skin potatoes
Yes to stone-ground mustard, but a little French's yellow mustard is OK too
yes to salt and pepper and a dash of sugar
yes to hard boiled eggs but I chop them up
yes to paprika on top

YES accompanied with an ice-cold IPA!

Oh man, I think I have a project for tomorrow!

peeled cooked potatoes, diced 1/2 to 3/4 inch or larger decent size chunks
chopped sweet onion, chunky - LOTS (sorry onion haters)
chopped hard boiled eggs, chunky - lots
either sweet relish or finely chopped sweet pickle and a bit of the liquid
some mayo and a little bit of mustard
celery seed (optional)
salt and pepper

mix and chill for several hours or overnight
adjust seasonings, add more onions

dump a drained can(s) of black olives on top so people that don't want olives mixed in can pick them out easily

Pretty basic. Mayo, mustard, celery, red onions, chopped egg, and a teensy bit of apple cider vinegar
I usually make it with cauliflower instead of potatoes, but I don't give a hell today, and may not until after the election.

I know, everybody says that about their family's potato salad recipe. Anyway, here goes:


For the salad
boiled white potatoes
finely diced onion
finely chopped green onion
finely chopped red, orange, or yellow bell pepper (I don't like the green ones)
finely chopped celery
finely chopped green olives
thinly sliced radishes

For the dressing (eyeball to taste):

good quality mayo (ex. Hellman's/Best Foods)
squirt of yellow mustard
a dollop of spicy brown mustard
a few dashes of Tabasco sauce
few shakes of worchestershire sauce
kosher or Himalayan pink salt to taste
black pepper to taste
Combine until smooth and a very pale yellow. Mustard shouldn't overpower the mayo.

Mix veggies & dressing until well-coated. Top with sliced hard boiled eggs & sprinkle with paprika.

Yum. I think I need to make a batch of this very soon, lol.

I like pickles. I just can't bear them in potato, egg, or any other kind of salad, particularly if they're sweet pickles. I even have a little ditty I sing if I encounter pickles in potato salad, I just make up verses on the fly and they all end with, "Pickles don't be-long in po-ta-to salad".

My potato salad is similar to the OP. I marinate the cooked potatoes in either Italian dressing or oil and vinegar. I use yellow mustard because I love the taste, and I'll put a little Coleman's dry mustard in, too. I do the hard-boiled eggs two ways in my hard-boiled egg slicer, and I don't generally garnish with parsley, but I don't mind that. If I'm feeling retro, I might stick some thinly sliced radishes on top, but they're meant to be eaten separately.

I like it crunchy, with onions, and I definitely want to taste the mustard. No offense to the onion-hater up thread, but I find it bland without onions. I've taken to using Vidalias or Walla Wallas, because I think the quality control is better with them right now - more consistent.

chopped celery
chopped onions
sweet pickle relish
Smart Balance Mayo
Lots of Yellow mustard, equal to the mayo amount
celery seeds

the celery, onions and pickle relish together should nearly equal the amount of potatoes. Do not let the mayo drown the salad.

I roomed with someone who had a girlfriend from Turkey. She made this potato salad and I am never going back!

Skin on or off potatoes. Boiled with salt to tender. Put em in a bowl and kind of chop/mash them.
Chopped Cilantro. Lots man. Lots.
Red and yellow bell pepper.
Mix these.
Then mix the dressing.
Pour over and refrigerate.

Lemon juice. 1/4 cup or so
Olive oil -same amount as lemon juice
Sea salt and pepper to taste.

(The cilantro could be parsley or dill)
Use lots of whatever fresh herb you like.

Except I mash the egg yolks with the mayo and chop the whites into the salad. Sometimes I add a bit of pickle relish.
