What's for Dinner, Wed., July 4, 2018

Another murderously hot day here and so I've invented another salad. I also have ground pork pasta sauce in the 'frig, which I will have with fresh pasta.

This salad is made with red and green lettuce and chopped vegetables. Fresh celery stalk from the garden, Persian cucumbers marinated for a short time in mirin, green pepper, scallion. Then I put on these tiny, sweet, pickled red peppers. I don't know what they're called but they are good. In addition, black and green olives and large caper berries.

For crunch, I added sunflower bites, which is a little one-inch cookie-type thing, but made especially for salads. Thousand Island dressing, which IMHO pairs nicely with olives.

Dessert is brownies with walnuts.

I am pooling resources with another single momma and we're having a traditional BBQ

marinated chicken legs
burgers w/grilled red onion
potato salad with everything but the kitchen sink
and a HUGE green salad with kidney beans, beets, sunflower seeds, etc

also grilled Zuchinni marinated in zesty italian dressing...then sprinkled w/parmesan
and some foil grilled asparagus w/olive oil and fresh garlic (first try at grilling in foil, it's sitting in the fridge now )

I am also debating whether we need some bread or maybe deviled eggs


No fireworks for me, I'm staying out of the thick of tourists at the Lake

BBQ type food.

My husband volunteered to cook burgers on the grill. I said that's fine with me, I'm not going outside. He's better in the heat than I am. I bought grass-fed ground beef for the burgers, which will be topped with Provolone cheese and red onion. We also bought four store-made salmon burgers made with chopped vegetables. My son's girl friend is coming over and she's sort of a picky eater -- I'm making Mediterranean farro salad with chickpeas that she will like. I had a lot of sugar snap peas appear in the last couple of days on the garden vines, so I'll give those a brief saute with some baby bella mushrooms. Corn on the cob. For dessert, yesterday I made some vanilla ice cream in my ice cream machine, and also some little butter pecan cookies to go with. Cold beer and iced tea.

With that much food, I’d wander by and grab a plate. Too bad, I don’t know where you are.

Next year we will add you to the invite. Neighbors brought all sorts of sides and sweets to go along. Also added 6 boca-burgers.

Now the clean up begins

Little eggplants stuffed with cabbage, bell pepper and onion in tomato sauce
My mother in law is bringing her fantastic lemon meringue pie for dessert.
