What can I cook with cherry tomatoes?

Notice I said cookóraw tomatoes are tasty but give me migraines. We have an extremely productive yellow cherry tomato plant at the moment and I need to figure out what to do with them. Iíve already cooked them in olive oil and garlic and served them over pasta. If it helps, I also have a lot of basil and feta cheese to work with.

2. I think they taste great with lots of other veggies.

I stir fry them along with cut bell peppers, onions, broccoli and rice. Throw in a small piece of salmon or tilapia.

24. Just throw the whole or chopped tomatoes into the pan. Or put them on top of the heated veggatables

while still room temperature.

Toss with basalmic vinegar. Serve on pasta.

22. A food mill will do that for you

It's a forerunner of a food processor - a mechanical hand-operated device that you use to force soft items through a variety of disks, removing seeds and skins in the process. I find it gives a nice smooth texture and is essential for making cream of tomato soup. I made some the year I had a bumper crop of yellow cherry tomatoes - I found the resulting soup not as acidic as I usually get from red tomatoes.

10. Breakfast Omelette

I stole this idea from the Twig and Leaf in Louisville.

Whisk three eggs with a touch of 1/2 & 1/2. Set aside.

Cut up a handful of mozzarella into small cubes.

Gently saute a handful of cherry or grape tomatoes in olive oil. Lightly season. Set aside.

Gently cook 3 strips of bacon, not crispy. Cut into 1" pieces. Set aside.

If you don't have leftover spaghetti, make about 1/2 cup.

Making the omelette:

1. Eggs in the small skillet over medium heat in cast iron skillet or with a handle that won't melt.
2. Add bacon without bunching.
3. Add spaghetti.
4. Add tomatoes and mozzarella.

5. Grind some pepper over it.
6. Cook the bottom maybe 3 minutes.

7. Either put it under a salamander or a broilet to cook the top. Don't stir.

17. This is a great side

Saute a small zuchinni and a yellow squash and a little onion in some butter till just softened. Add your tomatoes cut in half and cook for two more minutes or so. Warming them through or wilting them a bit. Add one tbsp of soy sauce and pepper to taste stir well. Turn off heat and shred chedder cheese over this while still in the hot pan.

18. With fresh green beans

Fry bacon and onions in big pan. Add fresh green beans, salt, pepper, and a pinch of paprika. Cook till just crisp tender. Add tomatoes and cook till just softened.

Tons of green beans coming in from the garden right now, tomatoes just starting.

19. Cherry tomato/Mozzarella Salad

Cut mozzarella cheese in small chunks. Mix with cherry tomatoes, basil, a little olive oil, and balsamic vinegar.

20. Blistered cherry tomatoes with basil.

Coat cherry tomatoes in olive oil, put into a hot pan with some basil leaves, salt and pepper and cook until the tomatoes blister. Remove from the heat, add some torn fresh basil and serve. I made this yesterday. It couldn't be easier, and it's delicious.

23. BLTs are a challenge with cherry tomatoes

but Alton Brown has a recipe for a panzanella - an Italian bread salad - with cherry tomatoes and a bacon dressing that comes close!

25. I just made a pot of chicken noodle soup...

and threw in a pint of underripe supermarket cherry tomatoes.

They taste a lot better simmered and next I'll try sautťing them, maybe in an omelet.
