Sesame-based Asian slaw recipe

It's still hot as balls, so we did another simple and cool summery dish. This Asian-style slaw is something my hubby came up with on his own after having something similar at a Japanese restaurant. The original iteration was just with cucumbers, which was also delicious, but he felt like he wanted to expand it a little and include some other veggies to make a sort of fusion recipe. It's dead simple, but you do need to let it sit for a little while in the fridge after you've dressed it and before you serve it. Also, the toasted sesame seeds at the end really elevate the dish.

This is a vegan recipe, as well. It stores well, and you can keep in in the fridge for a few days after you've made it. It may not look like a lot of dressing, but a little bit goes a long way. Sesame oil has a very intense flavour, and soy sauce is quite salty, so in the case of this recipe, less is definitely more.

We ate it with the Taiwanese shrimp omlette that we're putting the video up for next week, but it also goes great with grilled meats, fish, burgers, whatever.

But I wanted to try this out, like right NOW!
I had a regular green cabbage head so I used that. No scallions so I used regular onion.
Had the cucumber and carrot. No Sesame oil but I used a combo of Avocado and EVOO. No rice vinegar so I used some coconut vinegar.
No Soy sauce so I used Braggs Liq amino's instead. Very salty. I got daring and added a touch of worchester and a bit of maple surple..
Cut and mixed, cut and mixed... Took a taste before putting it in the chill chest..
OMG this is DELICIOUS!!! I ate about 1/2 the bowl... I can't wait for it to "ferment" a bit and mix the flavors better.. The sesame should be killer on this mix.
I have to go out later so I'm gonna get some sesame oil, Napa, green onions and rice vinegar.

There's lots of room for substitutions in this one, for sure. This is how hubby has refined the recipe after a fair amount of experimentation. If he's feeling lazy, all he does is nice thin cucumber rounds in the dressing with the toasted sesame seeds, and that works really well, too.
