so... not being able to eat it all fresh, I discovered mashed zucchini... it is a great substitute for mashed potatoes, yummy, freezes well and makes me feel better by not having to feed so much to the chickens...
chop, blend, grate or whatever, to be able to drain any excess moisture... cook in olive oil (my choice but butter would be ok) and reduce until the zucchini is starting to stick in pan... freeze extra...
now you can get creative... saute with onions (maybe peppers or what have you) and season to taste or bake with a crumb topping or... it is surprisingly good

(86,536 posts)juice bar/noodle bar and they had zucchini noodles, looked like spaghetti. I saw some in a health food store the other day too. I tried it at the noodle bar and it was good. Maybe you could try that too.
I googled zucchini noodles and went to that box of FAQs and there are some good ideas there, apparently they are good raw or cooked.

(22,031 posts)Thankfully, my fiancee decided to forgo zucchini this year. When she grows it, it's as if they were from Jurassic Park! They grow out of control and we inevitably end up with way too much and many are 18-inch or larger vegetables.
However, I do love the flowers if they're breaded and fried.

(16,334 posts)Grate it and add cheese, jalapeno, raisins, scallions, drizzle of lime juice. Fill your tortillas and heat as usual for quesadillas.
