Stuffed peppers. One of our posters here had them the other day and they sounded good, so I'm going to do the same thing she did. Have to go back through a few threads, though. If I can't find the post, I have some ground pork patties that I will use. They are already seasoned, so I won't have to do much.
I picked peppers from only half of my garden yesterday afternoon and had a big box of them! Most are kinda' small, though, probably because of the dwindling daylight hours.
Last night's beef barley soup using couscous instead of barley was a big success. It got too dark to cut horseradish for grating over the top, though, so I used chopped dill (also from garden).

(38,549 posts)We hadn't had them in a while and I was really glad that I made them, as they were delicious. I spend considerable time every week looking through the fliers to see what's on sale and thinking about what we haven't had in a while. I was lucky enough to get some really big peppers so even cut in half they were plenty big to stuff.
Last night, we had haddock baked w/ bread crumbs, lemon zest, and dill (and of course salt & pepper); baked potato; buttered beets; and steamed green beans.

(35,658 posts)when I went back through posts. Mine turned out so delicious, and even if they were small, they made good leftovers for munching the next day. So happy with the way they turned out.
